FAMILY AND CONSUMER SCIENCE COURSES
Any student pursuing an Advanced Regents Diploma can replace the three unit language sequence with a five unit sequence in Career and Technology Education. Sequences have been developed around three clusters of content: Home and Personal Management, Food and Nutrition, and Human Services and Family Studies. Each cluster focuses on one or more job concentration areas. One-half unit of Career and Financial Management plus the core courses identified for each cluster are required components of all Family & Consumer Science education sequences. To complete sequences, students can choose appropriate advanced concentration Family & Consumer Science courses, BOCES Program, and appropriate interdisciplinary courses from Business and Technology. A five-unit Family and Consumer Science sequence can be used by students pursuing a Regents Diploma.

FOOD AND NUTRITION CORE - (1/2 Unit) (Offered
in the Fall 2007)
This course will help you develop an understanding of sound nutritional concepts
through many hands-on experiences related to food and nutrition. You will explore
nutritional requirements for people of various ages and need; learn about the
dietary guidelines that promote long-term wellness; and plan, purchase, prepare,
serve, and evaluate a wide variety of foods. Careers related to food and nutrition
and how they match up with your personal characteristics and skills will also
be studied.
CLOTHING AND TEXTILES CORE – (1/2 Unit)
(Spring 2008)
In this course students will study clothing as it relates to culture, history,
social and economics situations. They will explore clothing and textiles as
a medium for artistic expression. By learning clothing construction skills they
will be able to increase their own wardrobe, evaluate the quality of ready-made
garments and be a better consumer. Careers will also be explored. Clothing and
Textiles may be used to fulfill the 1 unit in art required for a high school
diploma and by students pursuing an Occupational Education Sequence.
HUMAN DEVELOPMENT CORE - (1/2 Unit) (Fall 2007)
This course will help students see where they fit into the scheme of things
as an adolescent. They'll learn about themselves and ways of coping with the
problems and stresses they face and how to deal effectively with those around
them -- peers, family members, younger children, and other adults. Students
will have opportunities to investigate issues facing teens today, plan and carry
out activities for children and others of various areas, discover how they affect
the lives of adults and how adults affect them, explore career possibilities
and identify personal characteristics for these careers.
Food and Nutrition Concentration Courses
Gourmet Foods - (1/2 Unit) (Spring 2008)
In this course, students will learn advanced food preparation techniques, the
importance of food appearance and presentation, and the use of specialized equipment.
Careers related to food photography, food journalism, and food styling will
be explored. Prerequisite: Food & Nutrition.
International Foods - (1/2 Unit)
In this course, students will explore a variety of culture specific foods and
preparation techniques. Through the study of food ways, students will gain an
understanding of cultural differences and interdependence of regions and countries
around the world and of the ecological consequences of choices in the use of
the environment and natural resources. Current and future food careers will
be explored. Pre-requisite: Successful completion of Food & Nutrition Core.
Prerequisite: Food & Nutrition.
Human Services and Family Studies Concentration
EARLY CHILDHOOD EDUCATION 1 - (1 Unit)
Does the smile on a young child's face make you happy? If so, then this is the
class for you. This is not a class where you will be sitting behind a desk.
You will learn and apply the principles of child development in young children
aged Birth - 5 years. A hands-on approach will allow you to go into preschool
and elementary school environments to practice your skills. The course will
also allow you to create, organize, and manage a classroom preschool.
WORK EXPERIENCE
WORK EXPERIENCE INTERNSHIP – (1 to 3 Units)
This is a work based learning course designed to help the student to better
understand the world of work. Students will have the opportunity to intern in
a career area of interest while earning credits toward graduation. Internship
hours occur during the school day. The employer, student, and program supervisor
evaluate students’ progress through the use of individual training plans.
This course also includes a scheduled seminar which includes discussion of what
is successful employment, career development, health and safety on the job,
and the working teenager.
